they do and we do, but they’re also expensive and too useful to kill hence the taboo on their slaughter. (basically its would you rather eat for a little while or have a car/tractor for years? so eating horse is a desperation thing not a staple)

Plenty of places were horse is still considered a delicacy actually. Had some great horsemeat in Switzerland once.

Cows and chickens are just easier to raise and such so they are more of a staple.
